When you see the edges starting to turn brown, flip the oysters over and reduce the heat if necessary. Remember to always start the skin side up if the oyster piece still has skin. Using a metal frying pan has the advantage that if the seafood has a nice brown color, but you want to make sure it is cooked, it can easily be placed in the oven directly for another 5 to 10 minutes, at around 400 degrees.
